Introduction. This work is devoted to the problem of food shortages against the background of malnutrition of the population of different age groups and different intensity of work, using the example of assimilation of the trace element iodine.
Goal. Generalization of information on the properties of essential mineral substances, in particular, iodine, their daily consumption by the population of different age groups and different work intensities.
Materials and methods. Bibliographic – a theoretical analysis was carried out and literature data were summarized, the actual content of iodine and other macro- and microelements in the diets of different age groups of the population (adults able to work, children) and different work intensities was analyzed. The research used questionnaire, survey, mathematical and statistical methods.
Results and their discussion. The quality of food consumed and the caloric content of the diet affect a person’s physical and mental health, in particular, certain substances regulate the course of biochemical and most adaptive reactions, in particular, dietary iodine, as the most important trace element, is part of a number of hormones. The correlation between dietary iodine and its sources and the daily diet of men and women, depending on the intensity of work, was studied in detail.
Conclusions. Thus, in order to predict the influence of the food set of the diet on the development of alimentary and alimentary diseases, it is necessary to study the correlation dependence of the complex action of all food ingredients and to study the value of the Pearson correlation coefficient, which will contribute to the development of preventive measures. Control of daily intake and correction of the levels of macronutrients and other essential minerals (in particular, iodine) are integral components throughout a person’s life, and are absolutely necessary for the population of various age groups living in the territories radioactively contaminated as a result of the accident at the Chernobyl nuclear power plant, especially in persons with age-related changes in the kidneys.
